Maker’s Notes

This bar is made with 40% Valrhona Jivara milk chocolate, Valrhona Manjari 64% dark chocolate and pecans.

Inspiration

New Orleans is such a great food, drink and music city. It is also known for the confection praline. Every pastry chef has his or her version. Ours is made to feature toasted pecans, and when we couldn’t choose between dark or milk chocolate we used both! The praline is enrobed in milk chocolate then enrobed in dark chocolate.
